Creamy Chicken & Gnocchi Soup

Ingredients:

  • 3lbs of Chicken Breast, cubed

  • Olive oil, your preference as to which kind

  • Seasoning salt

  • Regular salt (I use Pink Himalayan Salt)

  • Garlic powder

  • Onion powder

  • 3 cups of Chicken Broth

  • 1 cup of Heavy Whipping Cream

  • 2lbs Gnocchi

  • 1 1/2 cup Chopped Brussels Sprouts

  • 1 cup Shredded Carrots

  • 1 tsp All-Purpose Seasoning

  • 3/4 cup Sauvignon Blanc

Why is it so difficult to get a good picture of soup?

Instructions:

  1. Drizzle olive oil in a pot (I used the Our Place Perfect Pot, but this would probably do better with a heavy-bottomed pot) over medium heat.

  2. Add chicken breasts to pot.

  3. Season chicken with a small pinch of seasoning salt & regular salt, and season with garlic and onion powder to your liking (I like a lot, you may be a vampire).

  4. Sauté the chicken until it’s slightly golden and cooked through, I live risky so I didn’t test with a thermometer but you do what your heart tells you to do.

  5. Add your chicken broth, heavy whipping cream, and gnocchi, stir, and cook on medium-low for 20 minutes, covered.

  6. Once things have marinated some, add your brussels sprouts, carrots, sauv blanc, and all-purpose seasoning (I think mine’s from Thrive Market?) and stir again, cook on low uncovered for about 15 minutes, check at the 10 minute mark.

  7. If yours is thicccc and you don’t want it to be, add broth to your liking. If not, enjoy!
