Quick & Easy Tomato Basil Soup

Ingredients:

  • Olive Oil

  • 1 Head of Garlic (grated or diced, you choose) (I use the pre-skinned cloves)

  • 1 Yellow Onion (diced)

  • 2 29oz Cans of Tomato Sauce

  • 1/2 Cup Chicken Broth (I use Low Sodium)

  • 1 Cup Heavy Whipping Cream'

  • 1 Tablespoon Dried Basil

  • 1 Cup Shredded Parmesan + extra for garnish

  • Salt

Brands I use.

Steps:

  1. Heat up one good drizzle of olive oil in a large pot to medium-low (mine goes to 10, I put it at 3-4).

  2. Add garlic to pot (I grate because it’s easier for me, do what you vibe with) and a big pinch of salt, 1 minute.

  3. Add onions, mix, and cook until fragrant and softened. This is where your house will smell amazing.

  4. Add one can of tomato sauce and mix.

  5. Blend, this is where your mileage will vary. I use a traditional blender because I don’t have an immersion/stick blender. If you have one, congrats, your life is easier. Blend until smooth.

  6. Return to pot and add second can of tomato sauce, stir.

  7. Add chicken broth, heavy whipping cream, and basil, stir.

  8. Bring to a simmer, not quite a rolling boil, cover and allow to simmer for 10 minutes. Longer if you want a thicker soup.

  9. Add parmesan, stir.

  10. Return to simmer, uncovered, until parmesan is melted.

  11. Taste and add salt if desired.

  12. Serve with as much parmesan on top as your heart desires.
