Street Corn Rice Bowl

Ingredients:

  • 1 lbs. ground meat of your choice (Turkey, Chicken, or Beef)

  • Taco Seasoning of your choice

  • I can of canned corn, drained

  • Chili Lime Seasoning (I prefer the Trader Joe’s version, but Tajin also works)

  • 1 bell pepper, diced

  • i cup of greek yogurt

  • Honey

  • Vegetable oil

  • Crumbled cotija

  • Salt

  • Uncooked (fresh) tortillas

  • 1-2 cups of cooked rice

Directions:

  1. Cook ground meat on medium-high with enough taco seasoning on it to make your heartburn start, remove once fully cooked;

  2. Cook bell peppers in a drizzle of vegetable oil with a dash of salt, remove once softened and slightly charred (if you like);

  3. Cook corn in another drizzle of vegetable oil with enough chili-lime seasoning to lightly coat;

  4. While cooking the corn - stir together greek yogurt, 2 TBSP of honey, and 2 tsp of chili-lime seasoning; taste and add honey or seasoning as your taste prefers. Once it tastes as you wish (sweeter or spicier), add enough water to make it drizzle-ier;

  5. In a clean skillet, on medium cook up enough tortillas to make your heart happy;

  6. Add to a bowl rice, meat, peppers, cotija, and sauce.

  7. Eat as you desire: husband creates taco bites with the mixture and tortilla. Enjoy!
